White Brinjal produces smooth, glossy, ivory-white fruits with a delicate, creamy flesh and mild, slightly sweet flavour that is less bitter than purple types. This attractive, high-yielding variety crops well over a long season in warm climates. The tender fruits are wonderful roasted, grilled, stuffed or in curries. Sow in seedling trays, transplant into full sun in fertile, well-draining soil, and harvest firm, tender fruits in about 70–80 days. Easy to grow in garden beds, grow bags or pots, white brinjal is a lovely, productive addition to any home vegetable garden.
