🍫 How to Make Chocolate & Cocoa Products at Home
1️⃣ Harvest & Ferment:
Pick ripe yellow pods, open them, and scoop out the white beans.
Place beans in a covered basket or box for 5–7 days to ferment. Stir daily.
2️⃣ Drying:
Spread fermented beans in the sun for about a week, turning regularly, until fully dry.
3️⃣ Roasting:
Roast dried beans lightly on a pan or oven to bring out the chocolate aroma.
4️⃣ Cracking & Winnowing:
Remove the shells to get cocoa nibs.
5️⃣ Grinding:
Grind nibs into cocoa paste. This is called cocoa liquor — the base for making chocolate.
6️⃣ Making Chocolate:
Mix cocoa liquor with sugar, milk powder, and a little cocoa butter (optional). Refine and temper to get smooth, homemade chocolate bars!
7️⃣ Other Products:
Use the powder from grinding to make hot cocoa, cakes, or cookies.
